Excited for The Great British Bake Off? To celebrate the release of the new series of The Great British Bake Off, we’ve got the perfect sweet recipe to make in preparation - Lime and Coconut Loaf Cake. Make and enjoy eating this cake while watching the show. 

Lime and Coconut Loaf Cake  


4 Eggs

230g Caster Sugar 

225g Unsalted Butter 

2 Limes

2 tsp Vanilla Extract

30g Desiccated Coconut 

2 tbsp of Whole Milk/Soya 


Parchment Paper

Loaf Tin 



Small Bowl 




  1. Preheat the oven to 170’c - gas mark 3. 

  2. Butter your loaf tin and line with parchment paper.

  3. Using the whisk, beat together the butter and sugar until the mixture is creamy. 

  4. Add in the eggs gradually, along with of 1.5 lime zest and vanilla extract. Combine with sieving the flour and the desiccated coconut and milk. Doing this will help to thicken the batter. Once thickened, pour the mixture into the loaf tin and ensure the top is smooth. 

  5. Bake for 1 hour and use the skewer to insert into the mixture to check if it comes out clean. 

  6. Wait for the cake to cool down, remove from tin and grate the extra lime zest and desiccated coconut on the top.
